How much can you bore a 1965, 361 block out and not be to thin?

What are your plans for it?Just rebuilding,or wanting more cubes for perf. If your looking for performance I wouldn't waste the time or money!Get a 383 or 440. 30 over would be a safe number to bore the 361.
 
The only one who can answer that would be your machinist who can sonic test it for you. As has been said before, there were NO thin B or R/B castings. There was however, core shift. That is why you must have it sonic tested. This is also why most blocks it is recommended not to exceed .060". There can be exceptions of course, but that is where sonic testing comes in.
 
I believe the party line for MoPar is .040" max. Yes they do make .060" pistons and plenty have survived it, but like Rusty said, sonic check is the only way to know.
