Looking for some info for a manual brake master cylinder to use on a disc/drum system. Currently have drums all around and want to use mopar single piston calipers.
Any info is appreciated

I have used one for a 76 Volare, manual disc brakes. Got one for years, on a 65 Fury with disc brakes and a 65 Belvedere with the same. It's my 'go-to' master cylinder.

This is on a 69' bee with sway bar and I'm reading something about sway bar and caliper interference. What are guys doing to remedy this?

The Right stuff kit I have allows you to mount the calipers front or back. I'm mounting mine in back and I believe that will clear everything, but not sure till next week when I get everything together

A '69 Bee with front sway bar will have to use REAR mounted calipers instead of the normal front mounted ones so there is no interference with the sway bar. Flex hoses are different because of the different orientation. Lewtot184 is correct on the M/C. You will want to use a 15/16" bore master cylinder to maximize line pressure (PSI) for the front discs. Disc's require more line pressure than your original drums to operate properly. My setup shown below, also a '69 Bee with front sway bar.
