1968 is least desirable of the breed. This will likely never be a high end car, but color combo is good. Beautifully restored driver is $60k at best. Working backwards if you paid in the neighborhood of $20-25k you might feel alright. You will likely be over invested in the long run, but driving...
A reason these C-body land yachts are available for a reasonable price is because HOA at adult/senior communities prohibit parking boats in the driveway. ( but seriously, some of these cars are a great deal for their condition )

Is there much wear on the throttle shaft on the primaries? A loose throttle shaft can cause some irregularity when trying to make fine adjustments. Some wear may explain why the linkage changed even though you did not touch it.

Pull off the fork spring.
Verify the pivot is in the fork relief radius.
Do the fork tips contact the release bearing pads fully? (post 5)
The fork should swing freely on the pivot and pretty much stay where...
No specs from Amazon, what a surprise. Looks like 1/4" pipe thread. If your fuel bowl vents correctly, it shouldn't siphon back to the tank. Fuel pumps have their own valves, so if the pump isn't the issue, it may just be the 10% ethanol in the gas nowadays, unless you don't have that in...
Check valve will do nothing for your situation. You could fill the bowls before starting. You also could install an inline electric pump that you manually activate to prime the carb when starting.
