My buddy has a '71 Charger with a 340 and I'd agree with what HawkRod suggested. He kept right up with me and my mildly-built 383 Magnum in my '70 Charger, until 3rd gear, when the big block cubes kick in. A done-up 340 is no slouch and will kick all kinds of ***. It was called the "baby Hemi"...
The Edelbrock Performer is pretty good for stock to mild engines, but the ports need to be gasket matched for a 340/360 as they neck down to 318 size near the gasket area.
On the one I have, the EGR / emission version, the ports are pretty much 340/360 size except about 1/2" (maybe a bit more)...

...not be aware of what I am doing with my 1970 Sport Satellite I will explain. My 70 Sport Sat came with a automatic 3 spd 318. I have since put a 340 in it (bc anything named “Sport” shouldn’t have a stock 318) with 3:55 rear gears in the 8-1/4 rear.

I recently pulled the 4:30's out of my 340 car... They were a lot of fun... And the car was driven from central Ca to central Tx with them so if you want to you certainly can drive it on the freeway..
I bet the resto cost was over $150K. But you rarely get that cost back. Especially the elite OE cars.
That 71 340 Duster that sold for $159k done by Mancini. It was said the restoration receipts alone were over $250K...
Being a lifelong Mopar nut since owning my first Duster, a 1970 340 4 speed back in 1976, I am currently working on another Duster project, a 1971. My last project involved putting a 440 in it and painting it.
The best street converter I had behind my 440 was a stock early 70s 340/727 piece. I took it from my friends car, swapped him my stock big block. He was looking for tighter, I wanted a bit more stall. We were both happy.
Maybe find a cheap small block 727 from a generic rebuilder?
I will say...there was time period when those emissions decals were first reproduced, and were all the rage.
Around 1990.
People were putting those $10 decals for a 340 on 318 cars and trying to pass them off to people who didn't understand VIN engine codes.
I changed the Wife's 340 Swinger from some no name style Turboflows to Dynomax Supers and it quieted it down a bit from the dragster that it was.
If you think those Dynoflows are too loud then I'd suggest the only cure is stock manifolds and full OE exhaust.
Right side 64-69 273 and Poly 318 and 67-91 318 block lug spacings are the same. 340 and 360 left side lugs are narrower than the 273-318 lugs. Left side 273-318 will fit in place of the 340-360 with a spacer.
