Remflex gaskets do work well but be forewarned, they're fairly thick and you might need longer studs if you plan on using the stock wire looms. I ran into this on my Sport Fury GT.
The last motor I did I did I used high temp RTV and no gaskets. Follow the directions and wipe off the excess. No leaks and no worries, just a re-torque after a few heat cycles.
I used Dry Graphite Lube from CRC on the manifolds on my '57. It's held up fairly well, but the car was stored in a damp garage last winter and a few rust specks were showing through.
Nice thing about it is it's easy to touch up and doesn't burn off or discolor...
Actually they were painted with the motor, though that burned off in short order then they rusted. So the correct "color" is, uh, rust.
That said, I've heard blasting them clean and then rubbing them down with powdered graphite gives a nice, fresh cast appearance that doesn't burn off. Full...
