My service manual says 2 1/2 degrees BTDC (Pictured). I have heard others say advance the timing as far as 12 degrees. What is correct?

I have been trying to tune my Holley 1920 with a manual choke on a 225 slant 6 motor. (Photos attached) I bought the car about a year ago and have been slowly restoring it. Overall pretty good shape. The car is driveable. I will be performing a compression test on my cylinders shortly...
Just pulled the valve cover to replace a gasket and saw that I have valves that are covered in oil sludge. What could cause this? Is it worth addressing? I work from home and have limited resources and knowledge. Any information would help though! Pictures attached thanks!
Anyone used one of these on their slants?
I am due for a new one and have heard the cork vs. rubber debate, but now a third option silicone supported with fiberglass!

Ive got a 64' Fury with a slant 6 225 engine, three speed trans.
I got the car about 6 months ago and have been noticing some white smoke out of the exhaust. I drive it to and from work two or three times a week. I do have to add oil every so often, about a quart every 4 months...
