I am thinking about putting 17" wheels on my 68 Satellite. Anyone have advice as to the rim width, back spacing and tire options that will fit nicely - front and rear.

Why stop at a 17" diameter?
A 10" wide wheel can fit the rear with 5" of backspacing. On the front, you may be limited to an 8" wide wheel with 4" of backspacing.

17 x 8 front, 4" BS on my 68 Runner. Clears the frame ~1/8" or so when pinned left or right. 245/45/17 tire.
18 x 10 rear, 4.5" BS. 295/45/18 tire. Diff has been narrowed ~3" overall. ~3/4" clearance inside and out.

I love the looks of the larger diameter wheels, but hate the ride.

im running 18x8 and 18x10 size are much easier to find and rides great.
