I've got some moisture building up around the interior of my windshield at the bottom and clearly need to pull the windshield and have it reset with a new weatherstripping/gasket to fix the issue which is relatively straightforward.

The dash/deck is looking a little rough and i'd like to repaint it while the windshield is out but am curious what to paint it with and the color, can you point me in the right direction?

At the same time, i'd like to pull the cracked dashpad and replace it with one i acquired. Do I need to pull the whole dash out in order to get the old one off/new one on? There are 3-5 bolts that i can't seem to get to.

Here are the cruel facts: Yes. you have to remove the windshield to get at the five bolts that hold the dash in. By the way, this is
the only way that you can put in a new head liner too! Decisions, decisions! What is your interior color code on your fender tag?

Great information and thank you. Here is the fender tag but the car is a convertible.

With the windshield out you could refinish the top of the dash without removing it. Replacing the pad can be done without removing the dash. Its not "easy" but is doable.
 
Headliners can be replaced nicely with all the glass in the car.
 
I don't know how you can wrap the headliner under the front gasket seal without the windshield removed?

Headliner material just needs to go over the teeth, the gasket is past the teeth so it means nothing. That area all covered up by the trim.
 
O.K., like I always say, easy for you, dificult for me!
I wouldn't want to try to stretch and glue the front.
