Is there anywhere online, or if someone knows, what is the correct bolt pattern and backspacing for a 74 charger se? ...

I want 15x8 for the front and 15x10 for the rear (currently the rear has 15x12) and it sticks out too much. Looking at Cragar SS or Cragar 510... any help is appreciated...

BP should be 5 on 4 ½" unless somebody did something weird to the car. What is the backspacing on the current wheels and how close is the tire to the wheelhouse or leaf spring ?

Not sure but I think the factory back spacing is approx. 4 1/2". You could check an aftermarket like Summit or Coker tire for specs on backspacing. At least you have those nice (round) fender openings which are easier to deal with than others. By the way, what area of NJ are you in? I am in the northwest and there is no one else in my sector that I know of.

Yes bolt pattern is 5 on 4-1/2" Typically on these cars back spacing is neutral so on a 15 x 10 that would be a 5" back space. BUT every car is different so the only way you will know for sure is to measure.

Place a steel rule on the face of the drum, (it helps to put a couple wheel nuts on to ensure its square) measure front and rear to the leaf spring. This will be your back space baseline. then measure from the flat to the wheel lip in several spots, the smallest measurement plus your back space measurement is the total. Now deduct an inch. This will give you the total width tire you can stuff in there with a 1/2" on each side. Wheel width will be less as you need to take tire sidewall bulge into account.
