I am pretty new to the Mopar Family. I have noticed lately that under hard launches in 1st gear... the gear grinds... almost like it isn't biting... Under normal acceleration it pulls away without any issues..

Any ideas?? Again.. pretty new... I was wondering if the clutch assembly it starting to show its age (which I do not know).

Any suggestions would be appreciated.... the car will be going away soon for the cold weather.

First thing I'd do is to remove the inspection cover from the bottom of the bell housing and see how much lining is still on the clutch disc.....

I don't quite get what you mean. Grinding is associated with shifting. does it grind when you shift from 1st to 2nd? Or does it grind putting it in 1st from neutral at a stop. Either way the clutch adjustment is where I'd start. If you have a lot of pedal free play then I"m going to suspect that's your problem.
