Adjusting 6-pack Carbs

Is there anyone out there who knows, and I mean really knows, the proper procedure for adjusting a 6-pack set up. I recently completed restoration on a 70 V-code car. The engine was totally gone thru with best of everything (too much to list but trust me, I know what went into it and was involved in the rebuild), and the carbs were also redone. Engine dynoed 499 HP and 526 Lb Ft of torque. However, it was about 18 months from the time the engine was completed until the rest of the resto was complete. On maiden trip, there was a very bad hesitation when you put your foot in it. Once spun up, car just rips up pavement. Would like to double check all settings to make sure everything is right. Idles good, starts good, etc. Gas is fresh. Any books out there you know that provide good instruction on proper set-up? Do I need to just run it some before screwing around with it? Thanks.
 
There is a "lull" in the action inherent to six packs. Ya drive along all happy then mash it expecting instant ecstasy but there is a brief............pause..... before all hell breaks loose.

Disconnect the vacuum lines to the outboard carbs and try it on the center carb only - unless you know for sure the issue is with the outboard carbs. I'd actually leave the outboard carbs out of the picture while you make sure the jetting and power valve settings are correct on the center carb. Then hook up the outboards and check WOT jetting.
 
In addition to the above info buy and install the ProMax metering base for the center carb as it is impossible to make the adjustments with the other carbs in place unless you make your own special tool.
