I have a set of 15 x 7 steel rims. What’s a good size tire to but on these……for my 68 Super Bee, also added new leaf spring with a 1 inch lift. Thoughts??
This ^^^. If you're going on all fours.P255-60R15 would work great all around. I had a set of 15x7 cop rims with those on a 79 Volare wagon and I had no issues at all. If you want the same size front and rear, go with the 255, you won't regret it.

Pricey but killer on the looks front and totally period. Yeah they’re polyglas but can’t have everything… If it’s a cruiser so what… There’s a place in Ohio I used to buy them from online. Universal Tire or something like that. They specialize in vintage tires.,
