New shop - write down mileage?

I've read a few horror stories regarding dealers and body shops taking their customers' cars out for joy rides, including a recent highprofile story. I had a bad situation about 2 years ago in my daily driver where I ended up regretting not doing this.

Do you guys get odometer signoff from the mechanic/body shop when you drop your cars off? I plan to take my car to a body shop I have never worked with before and dont want to take any chances.
 
We are required to accurately document mileage in and out where I work. Many years ago there was a situation with a customer and the mileage wasn't documented. The issue had to be taken to court. Long story short, Chrysler had to warranty the car until it dissolved back into the earth. Its crucially important
 
Never thought about this but I just took my truck into the dealer for a recall and one of the first things they did was take the mileage down. Now if you show up with a classic car to a shop then it might be a great idea to get the mileage. They would have to really want to drive the car to go through the trouble of disconnecting the speedo, but I wonder if you put a paint mark across or one of those warranty stickers that you can't peel off and put back on. Instead of saying "warranty void" it can say "Hahaha - caught you asshole."
