A 7" rim fits, an 8" might with careful measuring. Are you looking to run a big diameter wheel like an 18"-20" or are you staying with a traditional 15" size?
A 255 series tire fits well on a 7" rim. Again, with careful measuring, an 8" rim with a 275 is possible. A regular street cruiser or drag car may not need as much clearance as a car built for cornering. The side loads of cornering shift the axle and tires enough to rub if you have 3/4" or less free space around the tires.
275/60-15's are the biggest you can go on these cars with optimum back spacing. Gotta have the back real jacked up to get it to work though, air shocks much! Might wanna give mini tubs a thought. You'll never look back.
I run 275-60-15s with 4 3/8" back spacing on a 7 " wide wheel , but I have air shocks and homemade shackles also, I had to cut some off the metal of the inner lip wall ( I don't know what it's called) and I rolled the fender lip. the tires fit pretty good and I love the look.

I believe 8.5" wide depending on the tire you put on. Suggested tire size would be 225/45-17 on a 17" wheel assuming you want to go a little bigger but not go crazy. I just went through an exercise of selecting large wheels for my Roadrunner and a lot of companies have guides that will show you the stock wheel well measurements so you know what you are working with.
I believe in the rear a 15 x 8 with a 4.5 backspace will work with a 255/60 x 15 is about as wide a tire/wheel combo that will work with no modification.
