Does having a windage tray change how your oil level reads on the dipstick?

Stock windage tray and oilpan, no.

Well, you will have an extra gasket and the thickness of the tray sandwiched in between the gaskets but....it's negligible. This is on a big block, right?

X2 Cranky. In other words don't worry about it. What you can do with a windage tray is over fill by one quart but not required unless you spend a lot of time at max RPM.
