Just about to change the 10 inch drum to 11 inch on the 8 3/4, how much of the 10 inch internals are interchangeable between the 10 to 11 inch brake set up?? as I have never done this before? any help ?? thanks

Not very much, maybe the adjuster, maybe a couple springs. You'll need to change the backing plate to a 11" one. And the 2" and 2-1/2" width drum backing plates are different.

Why.... won't buy you an ounce of improvement.
Well, it will increase moment of inertia on each wheel, and unsprung mass, both normally considered negatives.
It will also increase braking power (approx 20% increase in friction area), and heat absorption for long and/or repeated stops.
However, tires stop the car, brakes only stop the wheels.
In a panic stop, the difference in say only 2 feet in total stopping distance can be a lot of mashed sheet metal, and an ounce of prevention being worth a pound of cure still holds very true IMO
