I hear that you're not supposed to use 11" drums in the rear with disk brakes up front because the drums will lock up before the disks will. Anyone out there know if there's any problems like that

Do not worry about it. Plus if it were to be a problem a rear in line adjustable pressure control can be used. Which by the way has always been used to control braking.

I'm running 11" rear drums with disc on 2 vehicles, no problems
Also wagons came with disc and 11" rear drums

No problem here

You won't have any problems.
When i owned my 71 Hemi GTX 4 speed car, it was front disc brakes and only 10 inch rear drums.
When it needed rears, i went to one of the U-Pull-It wrecking yards, back in the day, and pulled everything 11" by 3" rear brakes wise off a big, full size Chrysler car and installed that onto the GTX.
Stopped great, and never had an issue.
Go for it.
