I am having a terrible electrical issue with a 69 charger (440)

changed it over to a one wire alternator, the car will start, run for about 2 minutes and the just quit, almost like someone cut the key off, then the car won't start back up until it has set for a few days

Start with the bulkhead connector. Firewall side. Gently remove the three banks and spray with electrical contact cleaner until it runs clear. Handle with care. Brittle after 49 years.

"..a few days"? Odd. Won't start how-it cranks but no spark? Is there fuel in the carb when you try to restart it? Need details. If it cranks, has fuel but no spark, look at the ignition or coil. What is your voltage at the coil primary?

make sure the carb is not flooding out... stuck needle and seat maybe ? ... def need details on this as stated above ....

When you say "won't start", do you mean won't crank at all or crank but no fire? Was it running fine until you installed the one wire?
Usually,,,the first place to start would be the last thing you did but I seriously doubt if it has anything to do with the one wire alternator itself. It could be a bad connection from simply moving the wires around during the installation. Especially in the bulkhead terminal like Dennis H mentioned. Just to eliminate the alternator you could disconnect it and run off the battery for a few minutes to see if it does it again. Or, simply start the car and wiggle harness, again especially at the bulkhead terminal. Or, leave the ignition on after it quits and with a meter or test light, start looking for the correct voltage on the ignition system wiring segments.
