So I switched out a one-wire conversion regulator back to the stock style and think I initially may have switched the wires on the alternator when I reinstalled them. Correct me of I'm wrong but if I reverse the wires the alternator will "run free" and crank out as many volts as it feels like and if they're correct I'll see 13.8 at idle right?

You talking about the factory style Mopar isolated field alternator? Does not electrically matter which field connection is which. I'm sure, somewhere, the concourse purists can tell you that one is correct, but functionally, does not matter

Make SURE the regulator is grounded

If you're talking about the factory 70/ later system, simplified diagram:

Blue is switched 12V "ignition run"

Yep, it's a 75- thanks for the diagram my old manual doesn't have the wire colors.
