I like the custom console, because IMO (and it's just my opinion) finding a good used console is the toughest part of the project. I have a column shift A/T in my '69 Sport Satellite, which I will either convert to a 4 speed or a floor shift A/T - I have lots of the 4 speed parts already, and I also have the correct '69 A/T floor shifter/linkage and brackets.
But, whichever direction I go in (4 speed or floor shift A/T), it's still around $1,500 more I need to spend, some metalwork involved and very likely painting (console) since I have a red interior.
Van's Auto has very nice assembled consoles, for $1,250 which I may decide to go with if I go with the floor shift A/T. That seems like a lot of money, but given all the parts, trim, and plates that may need re-doing on a used one, I could end up spending that much by starting with a used one.
Finding a good (nice driver quality) console hasn't happened yet, due to the shipping cost and hazards inherent in shipping a large, fragile item. Maybe I'll have some luck at CPW in November - my guess is that whichever direction I go in, there will be parts available there.
