Goop. What most would call gasket cement.
Some gaskets like the water pump cover seem okay being naked, or having a bit of grease to hold them in place.
But, the rocker covers need something to hold them in place.
The head gaskets need?? And the sump or pan gaskets might like something different. So too the stock exhaust manifolds. And the inlet manifolds. I have the white stuff for the bolts that go in to the water passages, like the water pump bolts, the exhaust manifold bolts, and the head bolts. Engine is a 77 318.
Any words of wisdom to share please. I got some new exhaust valves for RockAuto last week, and should be ready to bolt it together in about 3 weeks.

Old-timer in the garage 55 years ago gave me this to use & explained how to use it. Been using it ever since.

Hi-Tack on head gaskets, intake & exhaust gaskets, just to hold them in place & Super Weatherstrip Adhesive on everything else. Again, just enough to hold the gaskets in place. The gaskets (Quality ones) will do the job themselves, just make sure the surfaces are nice & clean & flat. I've been doing this for years without problems.
I forgot to add, I do use RTV on the corners of the intake manifold.

Unless it's a big gap like an intake gasket to pan that needs RTV, this for everything.
Bolt to water jacket. Gasket dressing. Etc.
I kept "losing" tubes and buying more. Now I've got a lifetime supply.
Well, 5 lifetimes now that I've found them all.
