I agree with demonic, I don't think it matters. I've always put the printing down...but again, I don't think it matters. What's the part number on those gaskets? I see they have the two extra holes on each cylinder for the "motor home" or "police" cooling big blocks. I thought those were hard to find???
I always put the printed side up. Prob doesn't matter, though. I have some of those, and will use them when I need a .039 compressed thickness. Don't think they need any sealant either. A well known member here uses them for motors up to 12 to 1 C/R. No issues. Make sure the metal part doesn't overhang into the bore.
