I would leave it as is. It is the character that you have created with the car after all these years. There is already enough stock looking restos running around. Different is better.
I drug my 70 R.R. out of the field and drive it as is. Unrestored and ratty.

Another 70 Roadrunner owner here in Central Florida, Welcome! It's not my car, but if it was I'd tone down the motor a bit, maybe so a regular or modified hood would fit, get the interior looking a little more stock and leave that beautiful rear end just as it is!

I would also vote for leaving the car as is....maybe remove the blower and run a regular carb and air cleaner setup, and an Air Grabber hood.
The rear end looks mean and is awesome.
 
Not meaning to pile on, but there are tons of stock/semi-stock restos out there... Your car stands out in a crowd.... I'd tone down the engine some, probably re-gear it depending on how it's currently set up maybe brake and suspension upgrades... Having the rear tubbed with steam rollers may limit it being a true canyon carver but it can still be made to handle quite well & retain the awesome visual you've achieved... Then get it out to enjoy all those awesome Colorado roads.... I worked in Golden quite a bit, there area around there is ideal for cruising very scenic, lots of cool little towns...
