Mount on the wrong side OT the blocks mounting ear?
318 mount on a 340?

Use a nut to take up space.

Neither one is working correctly. In the first pic, the rear ear is about 1/2" away from the mount. The other is not even close. You do have to mount them on the rear of the block ears. Was this working together before, or are you getting parts from here and there? It is possible you big block mounts, or small block mounts from a wrong vehicle. The mounts are the same for 318 and 340 btw. I would never use a nut to take up space; if it doesn't fit, there is a reason.

The spool type mounts are a great design, but there are a few tricks to get the engine to sit into position right. I usually leave the mounts on the engine a bit loose, then set the motor in place. With the 7/16" bolts ran through the frame and spool mounts, I use a 2 foot Carpenters level across the valve covers to get the engine in level, then tighten all the bolts.

If your issue is that the mounts do not fit to the block, I have noticed that the replacement spool mounts do NOT differentiate between a 273, a 318, a 340 or a 360. They advise to use spacer washers on a 340 and 360 to fill the gaps. If you still have the original 340/360 mounts, you can get replacement urethane inserts from Energy Suspension. I'd go that route if I were you. The original mounts were made with thicker metal.

Ya my guess is wrong side of the block tabs or switched up the mounts. Both times ive installed engines i put the mounts on the block first then lowered them in the the ears of the k-member.

Thanks to all that replied to me.... I got it done after 7 hrs of messing with it! The problem was that i had the ears on the wrong side...lol thanks for all the info... i wouldn't have thought of switching the mounts.... cheers!
