Minor Stalling Problem

Hello all,

I recently bought a 68 Plymouth. I have the 383 and 727 trans sitting to the side so I can build it up over time. Currently shes powered by a built 318 that came from a 1964 coronet.

The car runs really well, but it has a problem where it stalls at low speeds. I'm talking about low throttle while pulling into the neighborhood or to the gas station. It stalled at around 40mph, but that only happened a couple times.

Any idea what the problem might be? I know this is like finding a needle in a haystack with issues like this, but I was wondering if you guys could point me in some directions. I'm relatively new to old muscle cars and I'm extremely excited/motivated to learn.
