Swapping my 360 for a 440; looking for some advice on best rear end gear ratio...

Swapping out my tired 360 for a 440 on my '66 Coronet. I got a fresh transmission and a 2600 rpm stall converter to go with the motor but still have my 273 gears in my rear end. Looking for some advice on the best rear end gear ratio to be able to get a good start off the line, and still maintain a decent power range on the freeway going 65+ mph. Looking for the happy medium.

High torque engines don't really mind highway gears all that much and the rpm will be in a good spot at 65 for good acceleration. Also, unless your street tires are pretty wide, you'll going to blow em off and with even more gear, that will happen even easier.
 
Quite a bit depends on your cam choice and intended use so build around that.
