Which way to face the exhaust manifold gaskets?

Had my power steering gearbox repaired today because it was leaking hydraulic fluid ('72 SSP). Paid about $100.00 U.S. funds. On the way home, I noticed an exhaust leak. The shop had removed the drivers side exhaust manifold for clearance. Now it's up to me to fix the leak, which is obviously coming from there. My question is, how to orient the factory style exhaust manifold gaskets, does the shiny aluminum side fit against the cylinder head or fit against the exhaust manifold? My application uses three gaskets, a middle one and two end ones. Thank you.
 
Thanks for the quick response. Now I notice the two small end gaskets are actually a little bit different from one another, I hope I can figure out which one goes where without lifting the exhaust manifold clear off.
