So you installed a square bore carburetor onto a spread bore intake manifold with one thin gasket.
If you install the seal plate and 2 gaskets (shown in post #12) the engine will run better than it does now.
If it's boiling power steering fluid it will also boil fuel in the carb which can get expensive.
If it was me I would remove the rad cap, block the wheels and run the engine to operating temperature and see if there are any bubbles, increase rpm to 1500 or more if need be.
To reduce the stumble increase the ignition timing to 17 degrees take notes on how it works and then try 19 degrees (with the vacuum advance hooked up and plugged)
Adjust the idle speed back to 750 rpm
