Will a 383 w/ headers, out of a 1971 Satellite, fit into a stock 1965 Coronet engine bay without too much trouble?

I wouldn't see why? so there was a 440 in there and you want to drop in a 383?

the motors in a 63-65 b-body, sit pretty far forward compaired to other years, that being said the headers might not fit, unless they're the 78030 headmans , I think they fit everything 62 an up .

But I believe you need the Schumacher Creative Services engine mounts as I purchased for my Lil 63 Polara w/ the 440 as a Max Wedge

Not mine, it's another 65, a roller I found and a friend has a '71 383/727 for me.

If your 65 had a BB in it, simply use the same mounts and brackets. You'll need to check the trans mount, but it being a 65, could well slip right in.
On my 64, using a 67 model 727, had to move the trans mount pad 1/2" back.
