Stupid question here but, Did you add friction modifier to the gear lube?

i am assuming the .07 backlash stated was a typo --- if not correct it to the spec given in a previous post -- even more important ,,, what did you set the pinion bearing preload at -- should be in the range of 20-25 in/lbs with the new bearings -- with no preload the pinion gear is basically running loose in the case which will cause gear whine.
do a pattern check after getting the preload and backlash correct to make sure the gears are meshing correctly.
US GEAR -- for a new gear set -- made in the USA --- available from Strange Engineering ,, Mancini Racing , Summit etc. -- stay away from the offshore brands -- Hoosier ,Nitro and any house brand

I would not use full synthetic ever, personally, but if you like it, I would think about running conventional for the break-in/500 miles

Possibility that the pinion depth changed slightly with a bearing change.

Hard to know without measuring.

Lots of potential gremlins when using old gears.
