Can you upgrade Headlights from NOS

I thought about that too - but mine are so low on illumination I don't like to drive at night. I'll keep the old ones just in case - but they are literally the ones that came on the car from the factory. I want to drive at night sometimes. Hopefully these halogens from Oreillys are brighter but not too out of place.
Obvious question, do they brighten coming up off idle?

Nope they are the same idling or under power. I'll play closer attention and drive it tonight.
BTW - is there a technique for making sure the new ones are properly aimed? - I know the garages have some kind of line up gizmo they use or used to use.

Trial and error here. Adjusters work good, but have not seen a chart with lines on a garage door since I worked at a full service Arco Station in Allentown in the 80's. Maybe the 70's.

Believe or not I have the same headlights in my 68 GTX that were there when I bought it in 1971. As you can imagine original headlights are not exactly illuminating when driving in the dark.

My wife's headlights aren't what they used to be either.

My wife is 20 years younger than I am and her headlights are on most of the time and light up the whole house. Maybe you ought to plug in some halogens too...... lol
