What's a safe place to stay close to englishtown for Mopar day?
I'm bringing my truck and enclosed trailer and my family .
Don't want my rig to get stolen.

Might want to hit up your local RV center for something like this and buy an Abus circular lock for it:

If you leave your trailer at the track overnight (if they still allow it) you won't have any problems.
I've done it many times before with no worries.

There is also a Motel 6 not far from the aforementioned hotel that is a good place to stay.

There is a Best Western Hotel on Rt 18 just across from the New Brunswick Mall.
Ihop, Dennys and Red Lobster are within walking distance.
