To all who helped with the "strange noise"... you were right, it was the flexplate bolts hitting the inspection cover, glad it wasn't anything major!

So we modified the cover and I had the carbs balanced and adjusted, just a little more tweaking to go (mainly setting up the distributor) and it's all set for Spring Fling at Woodley Park next month!
