I never said the carb came with jetting. I copied this chart from the Holley website years ago. I would say it just shows a jet equivalent for the orifice in the plate. But this is not the jetting the carb came with.

Fuel pressure is critical and no you do not need more than 6 psi.
Float levels, operating temp, lot's of details.
As far as jetting typically no more than a 64 in the ctr even in 505 alum head BB monster engines.
