Fel-Pro 1009 head gaskets which are a composition type gasket. Never use a steel shim with aluminum heads.
Timing...give it what it likes but a good place to start is 10* initial, 35 total. High compression engines usually do not like a lot....
Pistons... there should be an notch or an arrow on the top of the piston that points for the front. I'm not real familiar with those pistons so I don't know how they are marked. Did you buy them new from KB and have paperwork on them? All the info should be in the paperwork or you might be able to go to the KB site for it. Also, the correct ring end gaps are very important on these pistons so make sure your mechanic knows about that.

Your number sounds about right if I remember correctly.
If you have a clutch fan or a fixed seven blade then you may be OK. You can always add an electric pusher in the front for low air flow conditions. Just don't add a 4th core to your radiator as it will do little good. Do you have a 26" radiator? If not you might consider it. Also your water pump should have the larger impeller if you use the large fan pulley.
