Smoked Pork chops are the absolute best.
I can't be in the room with myself after eating sauerkraut...No sauerkraut?
Pork and sauerkraut is a big tradition here in western Pa. Supposed to bring you good luck in the coming year.....We will have a traditional pork roast with sauerkraut on new years day.
With that being said, I'd rather take that pork back to the butcher and make hot dogs out of it. Real dogs, not store bought junk. The some homemade rolls and sauerkraut, that's more like it.
Yep! I smoke Iowa chops to about 140°, turn up the smoker and open up the sear plate and reverse sear, Then I wrap them and let them rest. Tender, juicy and delicious.I used to go to a vintage snowmobile show and race every year. My kid always teased that I went for the porkchops. He was only half wrong. A real good chop is very hard to beat.
