I made these chops on the Treager last year.

We will have a traditional pork roast with sauerkraut on new years day.
With that being said, I'd rather take that pork back to the butcher and make hot dogs out of it. Real dogs, not store bought junk. Then some homemade rolls and sauerkraut, that's more like it.

Pork and sauerkraut is a big tradition here in western Pa. Supposed to bring you good luck in the coming year.....

If Kraut ain't brown I don't like it.
It is the best midnight snack, or horseradish and crackers.

New Year's Pork for me is Ham Hocks, Black-eyed Peas Greens, and Cornbread. Nothing better IMHO...cr8crshr/Bill    :usflag: :usflag: :usflag:

I used to go to a vintage snowmobile show and race every year. My kid always teased that I went for the porkchops. He was only half wrong. A real good chop is very hard to beat.

Yep! I smoke Iowa chops to about 140°, turn up the smoker and open up the sear plate and reverse sear, Then I wrap them and let them rest. Tender, juicy and delicious.

Just pulled this beauty off the smoker...nice 10-pounder, went 12.5 hrs @ 250 with a hickory & apple wood mix....we'll rest him an hour or so, keep the drink flowing and then dig in!

My wife likes to do chops using the Cajun Ninja's recipe for smothered chops. FFN AWESOME!

Yep, maybe some rice with tomato gravy, Collard greens.
We are camping with friends. Last night we had deep fried prime rib.
