Did air fried chicken & fries, we don't do fried food much
*cup of flour, tbls cornstarch, tsp baking powder, 1/2 cup Bisquick,
mix well
I like to use;
to taste, some like it spicey some don't I do...
lemon pepper, spicy seasoning w/a very lil' dark chili powder, garlic/onion powder & salt
mix & put in a large zip lock bag
dip/shake the chicken pieces in virgin olive oil, drizzle over in zip lock bag,
then in another zip lock bag, I shake it all up with all the dry contents, *above
but;
when we do it's a tad bit healthier than deep fried, moist & still great
convection oven &/or just on an elevated screen/rack, in reg oven on 400* for an hr.
cook the bird about 1/2 way & then add the fries, salt to taste
I did Idaho Russet unpeeled shoestring fries, on a mandolin, way too many...

Along with my version of a 3 bean (Actually 4 bean) salad,
1 can each, chopped green, kidney, garbanzo, black,
a lil' dices onion sweet peppers & celery

Pretty dang good I may add, do it about once a week or so
3 times a month-ish

Reminds me of mom's fried chicken, but hers was deep fried in Crisco
or stove fried, in a big black iron skillet, most the time

Thighs & drumsticks, too much for 2 but leftover are good too,
my lunch next day
