My *heavy* Buell (Ulysses) is 425 lbs wet...about 250# lighter than a sporty with different EFI, heads (factory ported), compression (higher from factory), cams (more aggressive from factory), and gearing (4k=80mph), with 110hp. I also - years ago - got Erik Buell to copy his personal ECM map for me and it is now in my bike. Commuting in the mountains I average between 42-56 depending on how much fun I'm having with the throttle. My 1996 S2T with a bone-stock Evo Sporty motor (the way they were built in '95 and '96) returns 50+ all day long - but it's only about 80hp (I've jetted the CV to get rid of the cough, and it has a factory open "hamcan" air cleaner). It also has TALL highway gears on it - not much off the line, but damn she's fun in the twisties! Much more like a diesel...have to build some steam (gearing, lower HP, heavy flywheels), but once you do she just keeps on going!
