Why the long launch ramp if they're in space?

If I had to write the explanation for it, I'd fall back on the "speed is life" mantra of real life fighter pilots, and say the catapults get the Vipers up to speed while still behind the protection of Galactica's armor.

But this is the gold standard for sci-fi fighter launches -



The pilot boards in the horizontal position, then they tilt down and the centrifugal force of the rotating station throws them out. It looks cool and it makes sense.

That was fantastic technology until Space X got their rockets working. Now it will be nothing more than an interesting footnote in the history of aviation.
