A lot of what can/should and what style of carb you like is also determined by the build of the engine and it's primary usage in the car, coupled with gear ratio & tire size, converter stall rating, car weight (OK, it's a B body, LOL, we know, LOL!)
Also, are you going to use the Edelbrock cam? If so, there own recommendations are for the 2 big carbs. Which can be troublesome and annoying. I'll say it like this;
The smaller 750 carb will give a better throttle response. Nice and snappy. Easier to deal with on a numerically low gear ratio and/or bigger tire. 3.55 - 3.21.
The 800 will provide a little more top end. Great if you spend most of your time there. Works even better with a numerically higher gear ratio, 4.10- 4.30 etc.....
The difference between them (Actual performance and feel) and there descriptions are nominal.
Of the Edelbrock carbs offered, I'm partial to the AVS style over the AFB, which can have a flat spot when you mash the gas. This would be the Edelbrock carb I would go with if I had a decent stall and gear ratio;

If you go with a Holley, that would be fine as well. Same as above. For ease of installation, I do believe an Avenger 770 would be a really good unit to use.
