Most of how I cook duck
now is shishkabob.
Chunk up the breast and
marinate in Italian salad
dressing for 12 hours.
When pokin' 'em on the
stick there's Canadian
bacon on each side. Also
use green chili peppers or
Jalapeños, cherry tomatoes,
baby onions, whole
mushrooms, and pineapple.
Using the pineapple juice
from the can as a glaze.

My favorite cut.
This morning indulged in a local delicacy.....supplier BBQ again for a promotion of A/C installation tools. I needed other materials anyway....lol
Start with a slice of thick cut (not a typo) bread, add a Derrick-cooked sausage, some gently fried onions and a thwacking of mustard. No ketchup.....heaven forbid someone cries havoc and releases the dogs of war uponeth me.....

Two packages of Bratwurst, Two Vidalia onions, one green Bell pepper, one yellow bell pepper, four diced garlic cloves, 1/4 stick of butter, Two bottles of Warsteiner Dark Beer. aluminum pan. Put the stick of butter in the pan on the grill and melt it. Put in the chopped onions, garlic, and bell peppers. Cook until softened. Poke alot of holes in the brats and put them on the grill and cook them 80% so they have nice dark grill marks as pictured. Pour in the two bottles of beer and add the brats. cook for twenty minutes or so. I'll never cook another Brat any other way! Braised Bratwurst.
