I recently purchased a mopar performance 500 cu in crate engine that sat in the shipping crate for 10 yrs still in plastic bag. My qustion is, do I need to replace the valve springs or any other component from sitting that long?

i'd probably take the heads off to inspect the cylinder walls for rust. if it's an iron head engine itn may have those old street hemi springs that weren't very good to begin with. it's cheaper to buy gaskets and spend a little time with it than take a chance on tearing something up.

It has the aluminum stage 6 heads I was just told that the valve springs may be weak from sitting so long

take the springs off and test them, especially for coil bind.
