I used to have a friend that taught at an alternative trade school.
One of his assignments was to build a bridge from one desk to another, spanning 24" using only manila file folders and fasteners or glue as raw materials.
When completed, the bridge had to support the weight of an O gauge locomotive crossing from desk to desk.
I thought that was a great practical application. It was fun, and it forced them to think about load, cantilever, tension, and sandwiched/sistered construction among other things...with a real world consequence.
