Man.....it seems like with your setup it shouldn't be creeping up that high. Have you ever verified the gauge with an IR thermometer? Another thing to consider is the transmission temp, if using the radiator's cooler (if you run an auto trans obviously).
On the clutch fan--you can adjust the 'clutching' temperature. I did this with mine, although it was a bit trickier, I had to cut another small notch to hold the spring. Some clutches have multiple notches in them already which makes it very simple. It helped increase the airflow at idle in my case, it's worth checking out--
