check the fuel level in the fuel bowls. Sort of a pain since you need to remove the top cover.
After running the engine to make sure fuel is pumped into the carb, turn off the engine and remove the carb top. The fuel level should be the height of the notch in the plate between the primary and secondary jets. I had an off idle bog with my 383, found the fuel level in the carb was too low.
