Well this may be a stupid brake question: where to measure to determine if I have 10 or 11s?

Look closely at the first picture where the linings start and stop

Your brake shoes appear to be installed upside down. Lining surface should be closer together at the top not the bottom.

Thanks for bringing that up. When my neighbor saw me taking the pics I mentioned how the shoes are sometimes put on wrong but it will take someone who messes with drums brakes more than me to spot it so I'll see what the forum says.
On each side I do have the shorter lining facing towards the front as the picture indicates.

The short shoe always on the front

The shoes are on correctly, but the primary lining is a bit short..

I've had the new shoes sitting for a month or so and went to put them on today, this is when I discovered one of the spring holes did not match the old shoes. I didn't have much choice but to get creative and use the next hole down with a longer spring. Luckily the spring kits are cheap so I bought a few and having the extra choice came in handy. Now that I revisit this thread it looks like my creative choice kind of matches @MrDee 's pic above.

So old compared to new with the difference circled.

So I couldn't use the shorter spring seen here:

So I ended up with this:

Any potential problems that I'm not thinking of? Only thing that pops to mind is maybe thats more spring force retracting the shoes and it would overcome the residual pressure valve?

I only drove it around the block and it seemed ok so far, maybe the pedal is a little soft and can use another bleeding.
