Started restoring a 68 Plymouth GTX that has been in a garage since 1973. Removed the gas tank, coated it, cleaned it, replaced the sending unit, put the orginal tank back on. Got the car running several weeks ago and it's running great.

Wanted to make sure the fuel gauge was working inside the car and I put more gas in it tonight and noticed a gas leak around the sending unit once I started adding more gas.

What would you guys do? Replace the sending unit again, try to replace the seal, or just get a new tank and sending unit and start over?

Dealing with gas scares the crap out of me so I want to make sure it's right.

If you installed a new sending unit and new lock ring the lock ring is your problem.
The repop lock rings are junk find a used genuine mopar lockring and your problem will be fixed. If you have your old one just clean it up and reuse it the new lock rings do not tighten up enough

AMEN new rings suck never seal.
 
Just an additional piece of advice... I had a new seal installed (twice actually) and they leaked both times (I made the mistake of having a shop do it). When I finally pulled the whole tank out to look, the seal was of center and had a gap where it was not sealing

I just bought a new ring and seal for $5 from autozone, used some fuel safe gasket tack to keep it from moving around and made sure to tighten down the locking ring real good.. it's been fine ever since.

If the locking ring isn't putting enough pressure down on the seal, buy 2 ($10 instead of 5) and double up the gasket... I actually thought I would need to do this, but in the end mine sealed up fine..
 
Sometimes you can tap down on the locking fingers on the gas tank to provide more bite onto sender/gasket
