Where does the coolant switch go for dual fan setup. 69 440

Hi im about to wire up my dual fans and was trying to figure out where the coolant switch goes. The coolant temp sensor is at the front of the block and runs to the gauge.
What temp range should i go for. Its a street only car and its summer all year round here.
 
Don't they come with a probe to stick threw the radiator fins ?
maybe when they were new, im messing with a car ive just purchased. he had it wired into switched. i want to wire it into the engine coolant.
 
Local parts store should have a fan relay set up for around $14 will come with a probe to stick in the fins, it has a dial on it to adjust when it comes on at what temp. you will have to play with it a bit. I mounted mine on the radiator fram near the battery in front. it can go anywhere really. Probe should go near the top tank for best results.
