Indy Cylinder Head 451, oil pan to Demon Carb won't run after about 2 hrs of use.

All in rpm is more related to your engine combo and to be honest, there are far better people on the site than myself to help you on that. I'm sure they'll chime in

After about two hours of use it wants to die, almost like it's running out of gas. After she rests for 4 to 5 hours it's good for another two hours.

Sounds like vapor lock, I (and many others) have the same problem. Modern fuel is not suited to carbs.

No.1 - Carb insulator/heat shield to keep carb cooler.

No.2 - A vapor separator can or fuel filter (like - http://www.summitracing.com/int/parts/wix-33041)with a (0.040" restriction in) 1/4" return line to tank.
