Could someone explain what exactly is a flank steak and a skirt steak. What is the best way to prepare them.... You guys are the experts so i know I'm in the right place! LOL

My wife and I like any beef rare! High heat is critical, adjusted according to thickness as thicker filet or T-bone, rib eye needs either less heat, more time or some type of cover to hold the heat in. My oven broiler isn't hot enough. My grille needs replacement, but it was an infrared glass Charbroil version of TEC. My next grill will be a TEC, but they are over 2k. That glass gets so hot (800°) it's perfect!
Using a cast iron skillet in a 600° or so oven does well too.
I like the outer layers crunchy but a red/purple center.
This is the best I've been able to do on the stovetop, burners WFO
